Also called the Mexican turnip, Jicama tubers add wonderful crunch to salads, slaws, salsas, veggie trays and tacos. Low in sugar, calories and fat, but high in fiber, the roots can be eaten raw or fried like French fries. The tubers resemble flat, brown turnips and have the texture like a Jerusalem artichoke. They store well without refrigeration. When Jicama plants are pruned and the seedheads and blossoms pinched, the tubers can reach 1-6 lbs. To save space in the garden, the drought-resistant plants can be grown on a trellis. 130-150 DAYS.
