Harvest early roots that are known as “baby ginger” in as little as six weeks just like the culinary pros-baby ginger is mild and tender and does not need to be peeled. For a stronger flavor, harvest roots at 4-6 months. This favored seasoning of the Orient is slightly pungent and superior to purchased powder. With lovely fragrant foliage, Ginger also makes for an excellent container plant on the patio. Perennial in zones 8-11, annual elsewhere. Potted.
