Named in honor of Fresno, California (Go Bulldogs!), this pepper is often confused with jalapeno, but instead Fresnos have thinner walls, often milder heat, and less time to maturity. Immature green Fresno peppers are more versatile with a mild heat, and can be added to many types of dishes. Green Fresnos can also be pickled and eaten whole. Mature, red Fresnos provide less flavor, but more heat.
